EATING MY EMPIRE
Before I got serious about kitchen organization and invested in the best spice rack I could find, I’d engage in the same ritual every time I cooked or baked. Jar by jar, I’d pull out every spice container, looking for the cumin or cinnamon or oregano or that one great masala. Prize in hand, I’d then shove everything back into the kitchen cabinet in no particular order. Inevitably, a spice tin would get lost somewhere in the back, and the next time I needed it I’d assume we were out and buy more.
I paid attention to all the spice storage rules, keeping them in their airtight spice bottles, stored safely away from light and heat behind the cabinet door. Wasn’t that enough? Well, no, Jarrett, that’s why you have three jars of dried dill. (True story.)
